The wine growing area in the narrow Finniss River Valley extends along the southeast shoulder of the Adelaide Hills, being part of the Fleurieu Peninsula. The SALOMON ESTATE vineyard is situated at an elevation of 120m above sea level. The soil composition in Finniss are an important viticultural asset. The topsoil, a pinkish mix of gravel and glacial sand, provides excellent drainage. The calcareous red and orange clay in the subsoil sufficiently retains water. The microclimate in the Finniss River environs is defined by midday heat and balanced by the cool afternoon winds. The nearby Southern Ocean sends in cold sea air each afternoon, which guarantees cool nights. This is a decisive factor in the aromatic development of our grapes at our property.
The Shiraz grapes from our single vineyard in Finniss were fermented in two open fermenters for a period of 18 days. After alcoholic fermentation, the young wine went directly into barrels for malolactic fermentation. Aged for 18 months in 300-liter hogheads. Approx. 35% new oak, mainly French oak.
