The Fleurieu Peninsula is bordered by the ocean and has everything from rolling hills to historic coastal towns. The vineyards on the Fleurieu Peninsula extend south of Adelaide, including McLaren Vale, Adelaide Hills and the Southern Fleurieu Peninsula. A place where you can hike through ancient forests, surf amazing breaks and laze on sandy beaches. The SALOMON ESTATE vineyards are situated in the Finniss River Valley at an elevation of 120 m above sea level. The midday heat is balanced by cool afternoon winds sent in by the nearby Southern Ocean. Soils are a typical mix of gravel, glacial sands, red and orange clay. DARK PEARL is a wine from the “dark side” celebrating Cabernet Sauvignon in a blend with its classic partners, Cabernet Franc and Merlot. An extremely deep coloured cuvee, with very pronounced fruit character and ripe tannins. The wine is matured for 18 months in small, mostly used French oak barrels to add to velvety texture and depth of the blend.
Harvest fourth week of March 2017. All grape varieties are fermented separately in open fermenters between 12 and 18 days, then into barrels, aged for 18 months in 300-liter hogsheads, French oak, approx. 10% new oak. Blended in October 2018; 560 doz. bottled in December 2018.
