This wine is dedicated to a forefather of the Salomon family who had established St. Ignatius College in the Adelaide suburb of Norwood in 1870. The grapes ripen on the Fleurieu Peninsula, home to small historic villages that dot the region’s rolling hills. The midday heat is balanced by cool afternoon winds rolling off the nearby Southern Ocean. The vineyards on the Fleurieu Peninsula extend south of Adelaide, including McLaren Vale, Adelaide Hills and the Southern Fleurieu Peninsula. The soils are a mix of gravel, glacial sands as well as red and orange clay.
Harvest mid of March 2018. Fermented in open fermenters for 12 days, then transferred into barrels. Aged for 14 months in 300-liter hogsheads. French and American oak. Approx. 10% new oak.
